Pistachio history
The pistachio is born from the pistachio or alfoncigo tree, called Pistacia Vera, belonging to the same family as the cashew tree. Their origins date back to Western Asia and Asia Minor, where they began to be cultivated for the first time in the drier areas of Iran, Turkmenistan, Turkey and Afghanistan. In fact, one of the requirements for the meatball to bear fruit is that it has been grown in areas with a lot of heat and with environments with low humidity indices.
Already known to the Egyptians, Greeks and Romans, the pistachio crossed Syria to land in Italy in the first century, later spreading through the Mediterranean.
Today, this nut is already grown throughout southern Europe and North Africa, in addition to other areas such as California, New Mexico or Austria. However, the Middle East remains the cradle of the pistachio par excellence.
And although eating pistachios today is the most common, it has not always been so. In its origins it was considered as an exclusive product of the highest social classes. So much so that one of the legends tells that more than 3,000 years ago the Queen of Sheba was captivated by this nut, raising it to exclusive food of royalty, and prohibiting it to the people.
Properties of pistachio
The peel that covers the pistachio houses inside an enormously nutritious green fruit, elongated and of a size similar to that of a hazelnut. Fried, toasted or with an extra touch of salt, pistachio is equally delicious. However, consuming it raw is still the healthiest option.
Among the long list of properties of pistachio, the Spanish Nutrition Foundation (FEN) highlights the following:
High in unsaturated fats (good fats).
Great contribution of carbohydrates.
Good source of vegetable proteins.
High antioxidant power.
Abundant content of vitamins B6 and E, zinc, potassium and phosphorus.
Very rich in magnesium, iron and calcium.
